Chef Nitzan Raz:

Chef Nitzan Raz started his career in the field of culinary right after he was released from one of IDF's most prestigious units. After a debut at the Chimichanga restaurant in Tel Aviv, he moved to New York where he studied at the French Culinary Institute. His experience in New York started at Chef Bobby Flay's Mesa Grill restaurant, and continued as he became a sous-chef at New York's Nouvea restaurant. Raz then headed the 4 Michelin-starred Jean Georges restaurant, and after that - the New York branch of Sushi Samba. Today Raz is one of the busiest chefs in Israel: after setting up the local Sushi Samba branch in Tel Aviv, he continued working on a variety of projects, Uno restaurant being one of them.
